From Cook 'Em Horns

Texas Scramble


6 strips bacon 

1 tbsp butter 

1 cup fresh corn, cut off cob or 1 can (12 oz) whole kernel corn  

½ cup finely chopped green pepper 

½ cup finely chopped pimiento 

1 ½ tsp salt 

Pepper to taste 

6 eggs  


  1. Fry bacon, drain and crumble.
  2. Reserve 3 tablespoons bacon drippings in skillet, add butter. Add corn, cook for 1 or 2 minutes.
  3. Add green pepper, pimiento, salt, and pepper. Cook 5 minutes, do not brown.
  4. Beat eggs, combine with bacon, add to skillet. Cook at low heat until eggs are set.
